Thai Coconut Curry Recipe with EcoVeganGal

I invited Whitney from EcoVeganGal to join me in the Tastemade kitchen and show you how to make an outrageously delicious Thai Coconut Curry. Whitney creates amazing videos to inspire people to live healthier lives,while being kinder and gentler to the planet. I saw this dish in her “Extreme Healthy Vegan Cheapskates” video and knew I wanted to give it a try!

Whitney from Eco Vegan Gal shares her cheap and cheerful recipe for Thai Coconut Curry, adapted from Eat Vegan on $4 Day,featured in the "Extreme Healthy Vegan Cheapskates" video
Serves: 4-6
  • 2 tbsp veggie broth or water
  • 1 can coconut milk
  • 1 purple or white onion, chopped
  • 1 tablespoon minced fresh ginger
  • 3 garlic cloves, minced
  • ¼ teaspoon crushed red pepper flakes
  • 1 teaspoon ground coriander
  • 1 eggplant, cut into bite-sized pieces
  • 5 shiitake mushrooms
  • 2 cups Chinese cabbage (Napa cabbage)
  • 2 cup chopped fresh Thai basil
  • 2 tablespoons coconut aminos
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon coconut nectar
  • 3 cups cooked brown rice
  • optional- peanuts or cashews for garnish
  1. Heat vegetable broth in a wok or large pan over high heat.
  2. Add onions and garlic,cook until the onions are translucent,about 2 minutes.
  3. Add ginger,coriander,red pepper flakes and turmeric.
  4. Stir and cook for one minute,until spices are fragrant.
  5. Mix in eggplant,shiitakes and coconut milk.
  6. Cook for 3-5 minutes,once the eggplant begins to soften,add napa cabbage.
  7. Cook cabbage until wilted,then add lime juice,basil,coconut aminos and coconut nectar.
  8. Salt&pepper to taste.
  9. Last but not least,top with peanuts and serve over brown rice.
