Broccoli Crunch Salad

I exist in a world where a large consensus of people are not used to eating a plant-based plate. So I should not be surprised when I hear people say things like “I never knew you could eat broccoli raw”. Well step right up folks and let me indulge you in the wonder that is this Broccoli Crunch Salad. It’s nothing original,you can find a version in most supermarket delis. But this one,I guarantee, is the simplest to make and you get a big flavor payout for very little effort.

This is a great vegan take along for picnics or potlucks and the omnivores will be non-the-wiser after your eating hippie granola food. A big Mahalo to Joey on Facebook  for asking me about this salad and motivating me to finally type up the recipe and make a video.

Adjust the ingredient measurements to your liking. In real life, I don’t ever measure when making this salad. Just be sure you have enough dressing to coat the veggies. Add a squeeze of lemon if you prefer a tangy dressing. And if you give it a try, post a pic to Instagram and tag me in it.

Broccoli Crunch Salad

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients (4-6 servings)

  • 1 medium sized head organic broccoli
  • 1/4 cup(40g) chopped red onion
  • 1 large carrot,grated
  • 2 ribs celery,chopped (or sub diced green apple)
  • 1 cup(120g) spicy pecans,chopped
  • 1/2 cup(75g) dried cranberries (or raisins)
  • 1/4 cup(30g) un-bacon bits
  • 3/4 cup(165g) vegan mayo
  • 2 tablespoons brown rice syrup (or sub maple syrup,agave,etc)
  • 1 1/2 tablespoons spicy mustard
  • 1 teaspoon curry powder
  • salt & pepper

Instructions

In a small bowl,combine vegan mayo,mustard,curry powder and brown rice syrup.Mix well, add salt & pepper to taste. Set aside.

Cut broccoli florets into bite-sized pieces add to large mixing bowl. Toss in carrots,celery,onions,pecans,cranberries.Pour in dressing and mix until veggies are well coated. Add un-bacon bits right before serving.

Note: This salad tastes best after being refrigerated for a few hours before serving. Keep unused portion in an airtight container in the fridge for up to 3 days.

My Week in Photos- Hello 2013!

It was a windy and rainy kick off to the New Year here in Hawaii. Hallelujah! We needed the rain and I feel like it washes away the past so we can all have a fresh start. And speaking of fresh starts, I promised my friend Nina a green smoothie recipe and I came up with this Spirulina Superfood Smoothie just for her. The easy recipe is posted below.

First week using the Bokashi bucket and I like it so far. Not too messy or smelly and I’ve already used about 20 oz. of the compost tea out in my herb garden. Happy herbs!

I made these bento lunches for friends visiting from Canada. Just tossed some quinoa cooked in vegetable broth into my Edamame Corn Salad and made it a complete meal with baked Okinawan sweet potatoes and a pineapple,Kau orange fruit salad.

The rain foiled my plans for a picnic, so we enjoyed lunch at The Peace Cafe instead. Heart & Seoul bowl, Soba Salad and miso soup are my favorites.

I ended up back at Peace Cafe the next day for a meeting and decide to eat light, so I noshed on this tempeh musubi. Which reminded me that I still need to work on my recipe for Sham Spam and get a video up…I have not forgotten your requests!

These dainty vegan earrings were a gift from my Canadian friends, don’t you just love them? I need to plan a trip to Canada so I can partake in all the vegan-friendly goodness they have happening up there!

Spirulina Superfood Smoothie

Prep Time: 5 minutes

Cook Time: 60 seconds (blending)

Ingredients (40 0z.)

  • 1 cup coconut water
  • 1 large orange
  • 2 thick slices pineapple
  • 2 small frozen bananas
  • 6 kale leaves
  • 1/4 inch slice of lime
  • thin slice ginger (more or less to taste)
  • small handful cilantro
  • 1 teaspoon spirulina
  • 2 tablespoons chia
  • ice
  • mint for garnish

Instructions

Combine all ingredients (except ice)in a Vitamix. Blend for 60 seconds on high speed.Top with ice, if desired and blend for an additional 15 seconds.Garnish with mint. Serve immediately.

My Week In Photos- Holiday Cheer

It’s so easy to get caught up in the frenzied pace of the holiday season. This week I stepped away from the kitchen and the computer to go out and LIVE a little, spending time with new friends and my ohana.

Went looking for my pot of gold and then I realized how blessed I already am.

Met up with the lovely Valentina from The House of V Bakery for a meal at Greens & Vines in Honolulu. I love it when you meet a new friend and you can just talk and carry on like you’ve known each other forever. A love of delicious food connects us all. It looks like we’re drinking Bloody Marys but it’s actually the house made strawberry & goji kombucha. It’s thicker than store-bought kombucha, almost like a smoothie. Super tasty and gave me a nice boost for the day.

After sightseeing and a beautiful sunset, we ended the day with a cocktail at The Modern hotel in Waikiki.

I did find time to do a little work. My friend Chanelle has been my baking muse,so I finally broke down and asked her for the recipe for these Ooey Gooey Sticky Buns.Even for a “baking FAIL” like me, they turned out awesome! The video recipe will be up on my YouTube channel soon :)

Winston the naughty Pug thought he’d open some Christmas prezzies early…

My Aunty Cynthia took Mom,Dad and me out to celebrate the season at Chai’s Island Bistro with music by the Brother’s Cazimero.

Purple Haze Smoothie

It’s Sunday, I’m rocking out to Jimi and feeling inspired. I may even do something wild & crazy, like more video editing. But first, I need a some liquid sustenance. The texture of this smoothie is big part of what makes it perfect for me. Using frozen fruit and no ice makes the consistency super duper creamy. None of the flavor is diluted from ice, so the natural sweetness from the fruit and the tang from the coconut yogurt really stand out. Add magical ingredients like maca, chia, spirulina to bump up the nutrition in this antioxidant rich meal-in-a-cup.

Purple Haze Smoothie

Cook Time: 1 minute

Ingredients (about 32oz ( 2 tall glasses))

  • 1 cup plant-based milk
  • 1/2 cup vanilla coconut yogurt
  • 2 cups frozen organic blueberries
  • 1 large frozen banana
  • 3 mandarins, peeled
  • I always use organic ingredients when available but make a special point to use organic berries exclusively.Conventional berries tend to test very high for pesticide residue

Instructions

Combine all ingredients in a VitaMix. Blend on high speed for 60 seconds.Use tamper as needed.No need to add ice, the frozen fruit should keep this pleasantly cool.Serve immediately.

*If you do not have 2HP blender, you may need to use non-frozen ingredients and add ice at the end.Ice will dilute the flavor slightly.

Root Canal Recovery elixir- greens a go-go

It’s a good thing I like green smoothies, because I’ve basically been living on them since my root canal last week. I can’t chew on the left side of my mouth and I’m worried about the temporary crown in front, so it just seems like less of a hassle to drink my meals right now, y’know? I loaded this one up with 4 slices pineapple, 2 clementines, 1 inch piece of fresh ginger, 1 thick slice of lime, 1 apple banana, 1 bunch kale, 3 sprigs of Italian parsley /2 sprigs of tulsi ( holy basil), and 1/4 cup of aloe vera juice. Blend on high speed for 60 seconds. Top with ice and blend for 15 seconds. Enjoy your glass of liquid sunshine!

 

This recipe makes about 40 oz and I drink it over a couple of hours. The pineapple provides bromelane as an anti-inflammatory, ginger also eases inflammation and the nausea from the medication I had to take. I add the clementines for a shot of Vitamin C, the apple banana for potassium, and kale because it is so nutrient dense. Tulsi is a powerful adaptogen and parsley has on of the highest concentrations of chlorophyl which helps oxygenate your blood. Adding a slice of lemon or lime really brightens up all the flavors.

 

Drink the whole pitcher and you’ve had a full day’s servings of fruits ( 5 servings!) and over 10 grams of fiber! Easy.

Ahhhh, that makes it all better. 64oz of green love can give you just the attitude adjustment you need. I used: 1 organic navel orange, 1 organic fuji apple, 1 organic bosc pear, 1 large handful EACH- organic kale, parsley, cilantro, 1 slice lime. Blend 90 seconds on high speed. Top with ice, blend 15 seconds. Enjoy!

Green smoothies and eating only high fiber foods is my secret weapon to staying slim through the holidays. With the exception of Thanksgiving, Christmas, New Year’s Eve and Day, my holiday eating rule is I do not eat anything that has less than 2 grams of fiber per serving. It can all add up really fast…a cookie here, slice of pie there, the muffins that your neighbor brought over-GAH! Suddenly I’ve gained 10 pounds and don’t even feel full.

The fiber trick helps me two ways: it keeps me full so I’m not tempted to snack more. And by avoiding the low fiber/high calorie/fat foods, it greatly reduces the chance that I need liposuction by January. I mean, isn’t it a drag to start the New Year and the first thing you need to do is diet?!
