It was a windy and rainy kick off to the New Year here in Hawaii. Hallelujah! We needed the rain and I feel like it washes away the past so we can all have a fresh start. And speaking of fresh starts, I promised my friend Nina a green smoothie recipe and I came up with this Spirulina Superfood Smoothie just for her. The easy recipe is posted below.

First week using the Bokashi bucket and I like it so far. Not too messy or smelly and I’ve already used about 20 oz. of the compost tea out in my herb garden. Happy herbs!

I made these bento lunches for friends visiting from Canada. Just tossed some quinoa cooked in vegetable broth into my Edamame Corn Salad and made it a complete meal with baked Okinawan sweet potatoes and a pineapple,Kau orange fruit salad.

The rain foiled my plans for a picnic, so we enjoyed lunch at The Peace Cafe instead. Heart & Seoul bowl, Soba Salad and miso soup are my favorites.

I ended up back at Peace Cafe the next day for a meeting and decide to eat light, so I noshed on this tempeh musubi. Which reminded me that I still need to work on my recipe for Sham Spam and get a video up…I have not forgotten your requests!

These dainty vegan earrings were a gift from my Canadian friends, don’t you just love them? I need to plan a trip to Canada so I can partake in all the vegan-friendly goodness they have happening up there!

Spirulina Superfood Smoothie

Prep Time: 5 minutes

Cook Time: 60 seconds (blending)

Ingredients (40 0z.)

  • 1 cup coconut water
  • 1 large orange
  • 2 thick slices pineapple
  • 2 small frozen bananas
  • 6 kale leaves
  • 1/4 inch slice of lime
  • thin slice ginger (more or less to taste)
  • small handful cilantro
  • 1 teaspoon spirulina
  • 2 tablespoons chia
  • ice
  • mint for garnish

Instructions

Combine all ingredients (except ice)in a Vitamix. Blend for 60 seconds on high speed.Top with ice, if desired and blend for an additional 15 seconds.Garnish with mint. Serve immediately.

Perhaps I could have shown more restraint but I didn’t. Like most Americans, we had a Memorial Day BBQ and I ate most of what came within reach of my little paws. Chips, crackers, bagels, Sheese, loaded baked potatoes, grilled corn, coleslaw, taco cups, candy, bloody marys, margaritas…I’m going to stop there lest you think I have a tape worm or that I am just a glutton. I did manage a salad or two, but I still felt bloated and in desperate need of repair. On an average day, I’d be making a big green smoothie. My VitaMix is already packed up for the trip home to Hawaii and I tried to use my cousin’s Blendtec- FAIL! I had so much work to finish after being disconnected from Wi-Fi for 72 hours, quick convenience was key in getting some proper nutrition today.

I received a sample of the Chia\Vie smoothies recently and the timing was perfect to give them a try. Each bottle is a single serving that comes in a recyclable aluminum container that is perfect to throw in your bag if you’re on the go. I drank the whole bottle of the Mango-J for breakfast and had my entire AI (adequate intake 1.1g for women) of omega 3′s for the day. Aha! Now my brain is working again. Since I’m from the islands, tropical flavors always appeal to me. The smoothie isn’t overly sweet and I enjoy the tang of the mango.

I had the bottle of banapple-berry smoothie for lunch with some raw buckwheat crackers and felt completely satisfied. While the banapple-berry didn’t have a really distinct flavor like the mango, the fruity goodness was still highly drinkable. *glug, glug, glug*

One of the pluses I see in this product is that the chia seeds are ground, as opposed to being left whole, so the nutrients are more bioavailable. Chia is magical because it is a sustainable crop that is naturally pest resistant, vegan, gluten-free, high in protein and fiber. The gel-like consistency helps move things along (if ya get my drift) after a weekend of hard eating. I did question the ingredient listed as “natural flavor” but contacted the company and was assured that these ingredients are plant derived, organic compliant, GMO-free, MSG-free, all-natural, Kosher Pareve, and vegan. I would definitely take these Chia\Vie smoothies along on my next road trip adventure since refrigeration is not required (shake well and  chill for best taste).

It’s Friday and I’m already getting my yummy on! Peanut butter and chocolate for breakfast,’nuff said. 

1 cup homemade cashew milk, 2T nut butter, 1 container chocolate yogurt, 2T chia, 3/4 cup blueberries. Blend all ingredients on high for 60 seconds, top with ice and blend 15 seconds. 15 grams of fiber, packed with protein. This is a serious meal in a glass!

I’m a girl on a mission to make some ganache today, so no time for my normal smoothie ritual. Instead, I tried Mamma Chia Blackberry Hibiscus drink and it was GOOD. The taste is very light and fruity, sorta like a popsicle. And 10 grams of fiber in one serving? YES!!!!

…And I will call it The Choco-maca-chia-mint smoothie! Tell me that doesn’t knock your winter booties off, riiiiight?

For this concoction, I used: 3 homegrown collard green leaves, 1 copious bunch of chocolate mint ( use whatever variety you can grow, see note below), 2 big sprigs parsley, 1 stalk organic celery, 1 organic pear, 1/4c aloe juice,1T cacao, 2T chia, 1T maca, pitted dates (to desired sweetness). Blend all ingredients in the VitaMix for 90 seconds, high speed. Top with ice, blend 15 seconds. Enjoy!

I drink this and feel ALIVE! Three servings of vegetables, one fruit serving, packed with pure, plant based protein and over 10 grams of fiber. Remember, 30-40 grams of fiber a day is my trick to staying lean and mean. How easy can it be?

Note: Even if you have a purple or brown  thumb instead of the proverbial green thumb, fear not. Mint is one of the most forgiving herbs you can grow. Place a cutting or leftover sprig of mint into a container of potting soil in a sunny to partly shaded spot outdoors and water as needed when soil dries out. Mint sends out runners, so you will have a big pot of it in no time. No reason to waste money buying it when it’s SO simple to grow!
